Aldi sells overripe bananas for 10 cents a bunch.  So I am making the delicious banana bread of wonderfulness.

Over the weekend, we had home-cooked ribs. Best recipe ever.

I have learned to make my "eggs over medium" without breaking the yolks.  Go me!

word ... over medium is the best, Yolks done enough to be safe but still runny enough to soak up with toast or mix with ham. Yum.

As a southerner and the son of a farmer and soldier (my dad picked tobacco as a boy) breakfast is an important meal for me. Growing up, my dad always got up early to cook us fried egg sandwiches with bacon and a dash of pepper with coffee and usually grits or oatmeal. He and I would sit and read the paper and eat. If I have to skip a meal, due to empty pockets or necessity then Im more likely to drop lunch or dinner. So...

I got out two ramekins yesterday for breakfast,... set the oven at 425 put a slice of thin ham in the bottom of each ramekin and cracked an extra large brown egg in each one. Topped with some grated cheese and some butter and baked for 12 minutes and you have a real treat. And its compact too. Spray the ramekins with cooking spray (butter flavored first to prevent any sticking. They just slide out.
Oh and serve with fresh hot whole grits (or quick grits, just don't use the microwaveable kind).

My mom and I picked blueberries on Wednesday and now I have 6 delicious pounds of blueberries just waiting to be eaten and baked into shortcakes and pies and other tasty things.

One of the part-time nurses at work has a garden that is apparently quite fertile this year.  She has been bringing us fresh lettuce for a month or so, and today presented about four of us with HUGE bags full of produce. Radishes, zucchini, cucumbers, lettuce, sweet onions, green beans and peas.

I had an impromptu stirfry for dinner tonight with zucchini, onion, tomato and peas cooked in a little teriyaki sauce. It was fabulous. If only I'd had a red bell pepper it would have been perfect.

And I make chocolate chip scones for dessert.  My tummy is so happy.

(ETA: Ah, apparently zucchini has two c's and one n.)

Hmmm, I don't recall putting those there.  I think they snuck in when I wasn't looking.
