Easy Dinners

Tonight I bought some center cut pork chops and cut them into 1 inch cubes. I did a quick marinade with some cumin, carne asada seasoning, fresh garlic, diced onion lime juice and lemon olive oil. I Let it sit for an hour or two. Then in a pan I began browning some onions in 1 tbsp of butter and 1tbsp of shortening (crisco). At the same time I also started frying up some corn tortillas in a seperate pan. The tortillas are done when they are semi crispy on both sides, but still flexible.  Throw the meat in the hot pan, and brown on medium heat...

Then dice up some Jalapenos or Habenero peppers for heat or red bell peppers for taste save those untill the last second and then throw them in the pan brown for 30 seconds and then turn off the heat.

Wrap up the tortillas for a crunchy yummy taste, add a little salsa or sweet red chili sauce if you like. These are even good cold...

That all sounds good, except the pork chops.  Those are gross.

with the beef, I'd grill it for a little bit rather than fry it, over hickory chips if possible...

Hmmm...

You could do chicken, throw it in the freezer so its partially frozen and then dice it into cubes. then marinade it. You might want something with a lot of flavor to punch up the chicken,... you may also need a tad more butter....

It depends on if they're ninja porkchops.

(I had a prof at BYU in family science who has a family story about ninja porkchops. They were from his wife's parents' food storage, the freeze-dried B-somethings, the military meals? Don't remember. Anyway, they were small and round and hard, so his kids thought they looked like ninja stars. Hence, ninja porkchops. The story is in a book he edited on the Proclamation on the Family.)

Mole is magic...
Into a pot went chiles, tomatoes, nuts, sugar, tortillas, bananas, raisins, garlic, avocados, and dozens of herbs and spices. The final ingredient was the magic one: chocolate.
