3 hardly seems like the point where you get amazed they haven't run out of ideas yet. Final Fantasy 11, on the other hand, really has me wondering.

Well there's a difference between most series and FF. Most series portray action that has somewhere intertwined into the plot a connection to the last ones.

Whereas Final Fatasies are totally non-linear. Thats another reason why I dislike the series so much. Plus they change the magic system, and what not so much that you could pick any one up(FF-FFX2), and you won't have to know anything about any of the others to jump in.

Take Warcraft Thrice part duex. I enjoyed the campaign of this expansion pack. There are a bunch of story plots and such that made me want to keep playing. And the addition of playing it online with my friends(or randomly which will stick me with a bunch of jackasses), makes it all the more worthwhile.

I'm assume you mean the games aren't sequals to each other, because they're some of the most linear games out there.  And people don't play FF for the amazeing game play, they play them for the stories.  The FF series are some of the best at makeing you actualy care for the characters.
