Man.  Anyone in Utah (ie Provo/Orem) know where I can get Thai ingredients?

I'm moving up there, and I'm going to need to stock my pantry.  I tend to cook about 50% Thai, 15% Mexican, 15% French (when I can afford it), and 20% Mormon & other.

I haven't had anything tasty in a few days, for the most part.  Food poisoning took it right out of me.

There's an Asian Market near the hospital, on 500 West just off of Bulldog. We went there to get Korean ramen, and I saw that they had Indian ingredients. They probably have Thai too.

That place is called Many Lands, and it's pretty good. I haven't looked for Thai there, but I wouldn't be surprised.

That might have some stuff, but a Thai-specific store is almost a must.  It's next to impossible to find Kaffir Lime Leaves anywhere else.

Many Lands is really something else.  I have a homebrew Mafe recipe that calls for something called "Fish Spices" that are brownish in color, but no one really knows what's in it.  And what did I find at Many Lands?  A jar of brownish spice called Fish Spices with little to no actual explanation of what it was.  And the recipe comes out perfectly.

I went to Bombay House tonight with my roommates. I love that place, from the decor to the music to the waiter who always makes you order too much food by saying "And?" after everything you tell him. Oh, and the food itself is fabulous too. I love Indian food. It's tasty and I still feel good after I eat it.

I will go through serious Bombay House withdrawals when I leave Provo.  :'(

I cook with "fish sauce" all the time, though "fish spices" are new to me.

Next time you go, ask if they have any Kaffir Lime Leaves, eh?

an egyptian market would have kaffir lime leaves, at least every one I've been to has, the problem is trying to find middle eastern(iranian iraqi israeli) type ingredients in california where multicultural mean putting random foods into taco form for that delightful "south of the border" flavor... god damn bobby flay...

it's around Sandy (not sure the exact city) and it's a French restaurant that everyone out here thinks is run by the mob.  Typical cost is around $100 a person for a meal.  They even have their own Zoo there.
Title: Re: Best food lately
Post by: MPlease on December 19, 2005, 04:49:25 AM
Their own zoo? wow. But French eh? I lived in Belgium (close enough to France for cuisine's sake) for a year, and while the French may be famous for their cuisine, I don't really understand their attachment to slabs of raw fish or piles of raw hamburger. Although escargot is actually quite good. Deserts are usually worth the $100 though... mmm... there are days I would kill for real chocolate, French style crèpes, Gauffres de Liége, or one of their designer ice cream sundaes...

Oh yes, and if the French ever tell you that they created the fry, beware. The Belgians are quite annoyed that the French stole the credit for their invention...

By "zoo" they have an ostentation of peacocks (normal and albino).  I'm unaware of any other fauna they keep around.

Los Hermonos is American Mexican food, which IMHO is much better than authentic Mexican food. I can do without the flies and odd (unedible) pieces of pig.

"Authentic" is just silly.  For example, you can talk about "authentic" Chinese food, but there are so many different regional varieties of Chinese food that the differences between "real" Chinese and "American" Chinese is sort of silly, in comparison.

Ari is from Hunan, which has spicy food (not too dissimilar from Szechuan), but her mother learned to cook largely in Canton, so they eat milder food at home.

to be fair, though, China is a vast region of many sub-ethnic groups. As you point out, you can be more specific than "Chinese" food. However, it is more than fair to say that Los Hermanos food is not the sort of food that is typically eaten in Mexico. Thus, it is not authentic Mexican.

I actually made hunan food last night, mu-si soup, it's served all over hunan, which is a very pretty place, i don't feel right cooking food from a region unless I've been there myself, and I cook food more often from places I've visited more frequently, which is why i mostly cook selk and iseraeli food.
for tonight:
grilled salmon with a blackberry and red wine reduction
grilled potatoes with gravey made from the the leftover salmon juices and flour and onions
boiled then creamed radishes(kind of like spicy cremed spinach)
this would or is an example of delicious selk cuisine.
tomorrow night i'll treat you to some israeli recipes.

Title: Re: Best food lately
Post by: Maxwell on December 23, 2005, 03:19:25 PM
it's actually quite good, and a little spicy, however the addition of some lemon juice can take the edge off.
also for tonight I plan to make
Brisket(traaditional)
Matzobrie, which is an egg dish made with matzos and onions added to scrambled eggs.
latkes, they are sort of like fried potato pancakes, or perhaps jewish hashbrowns
blinses, sort of like semi-sweet cheese burritos made with pancakes(served with sour cream apple sauce and jelly)
tomorrow...more selk food, or maybe thai....but probably selk.

My mom and I made fresh salsa yesterday. It was great--mostly because the lady who came to help my mom clean is originally from Guatemala, and she helped us make it. She showed us how to cut the jalepenos holding them with a plastic bag so you don't get the juices in your hands (it makes your hands feel like they are on fire if you don't use a bag or gloves). She also kept taste-testing it for us and telling us to add more salt or cilantro or whatever. It turned out sooooo good! We made a ton, and it's almost gone already.  :)

Now I just need to convince my mom to make her famous caramel popcorn. It's a bit of a mess, but very tasty.

we had we had gremres with bannock and pommegranit pie
and since i doubt you know what gremres is...it's kind of like a thick fish stew made with potatoes, cream, corn, salmon, crab, catfish, lamb, onions, leeks, several typs of bean, and a few local( as in kairegaine not santa barbara) vegetables with hard to pronounce names
and bannock is a large soft bread loaf made with several different typse of wheat(perfect for dipping) and I'm pretty sure the pommegranite pie is self explanatory.

I made a simple curry that was pretty good last night, and now have leftovers for a few days.

For the record, the Asian Market near BYU in Provo is Laotian, and because Laotian cooking is very similar to Thai (as they're right next door), they have pretty much anything you'd want at a Thai market.  This makes me happy; sometimes I really have to hunt to find lime leaves.

Also, Jeffe dropped by for a surprise visit Saturday with some good food. Whole foods ham sammich. Also, Pringles of the Chili flavor. mm.... goood... and you keep belching them up all day!. Also, the Paul Newman Oreo rip off, but they were better than oreos.

I really wish my husband was into that. When I don't feel like cooking and I get him to actually make me something, he considers Hamburger Helper too difficult and time consuming (he's made it a few times in our years of marriage, but usually isn't willing to go through the trouble). It's annoying that if I want something to eat it's always up to me to do it. Although on the plus, he is always very grateful for me cooking for him and does not take it for granted. I really appreciate that.

Guys who cook are awesome! (Even if only sometimes.)

My husband cooks once per year. That's the holiday candies he makes at Christmas. Otherwise, he doesn't cook.

My brother-in-law, who served his mission in Italy, is a great cook. He makes lasagna, pizza, and it's all soooo good. We invited them over recently and he made these gourmet pizzas for us to eat. I liked the sausage and potato one the best. I don't think a single one of them had tomato pizza sauce on them. They were divine.

Get em to do some slow cooker cooking and compliment them on how the food tastes. Most people dont like cooking because they feel a bit intimidated by it or overwhelmed. A lot of times cleanup is an issue. Help em out and make cooking a family thing and you'll find they'll like it more.
Actually Im writing up a slow cooker article for my Gaming Chef column with a few recipes. Slow cookers are great because they create great food with little prep.

We've been married for 9 years, and if I haven't gotten him to help with cooking in that time, I don't think a little slow cooker experimentation now is going to help. *Sigh*

He does make truly fantastic orange chocolate truffles, though.

My husband thinks that if I'm cooking, why would he need to help. It's like pulling teeth to get him to just grate some cheese. And when he does cook I offer to show him and help him cook something harder (you know, harder than Ramen or Mac & Cheese), and even then. I have shown him how to brown ground beef, and thaw out meat, so he does know that now, but he is very averse to cooking. And I know it's not the clean up thing because he wouldn't have think about cleaning up afterwards. It wouldn't cross his mind. Even when I was sick a few weeks ago I had to beg him just to make me something, anything. It's so frustrating!

Get men to cook can be difficult because many men fill uncomfortable in the kitchen. Some women are very possessive of their kitchen (like my wife) and prevent their husband from cooking in order to avoid eating some truly horrible food.

Now, I have to admit that I am one of those few men who like to cook. But usually my wife cooks because she is a vastily superior cook and I usually don't have the time. Still, I have made it clear that there are some dishes that I prepare. My wife says that these means that the whole family must eat poorly (because daddy is cooking) but I'll never get better unless I'm allowed to cook.

By the way, my ginger pork turned out just fine today even if it wasn't as good as my wife's version.

I pity you, however, if he can only do Ramen you may not suffer as bad if you can get something other than the American Top Ramen (note: I'm organizing a campaign to have the FDA label Top Ramen as not fit for human consumption and I think Kraft Mac & Cheese could get added to the campaign). Korean, Japanese or Chinese ramen is way better. I prefer the Korean Shin Ramen myself. If he can do ramen then you can teach him to cook a little more by getting him to chop vegetables and add them to the ramen along with cooking an egg in the ramen.

If this tip (or the excellent slow cooker tip) doesn't works, force him to take a cooking class.

I must just be very lucky--Chris cooks just as much as, and often more often than, I do. We both enjoy cooking, and we're both pretty good at it (MsFish says that we have a combined superpower--making anything we cook taste good :) ).

We both like to experiment and make up new recipes, too.

I think this is because both of our mothers didn't really know how to cook when they got married (our fathers taught them), and both sets of parents made sure their offspring could cook so we wouldn't have problems later on.

That said, Chris made some killer cheese enchiladas yesterday, and I learned how to make a Hot Milk cake that seems like it'd be perfect for part of a strawberry shortcake.

I have to agree with Jeffe, slow cooker is the way to go.  I've been using a slow cooker cookbook for years with great effect.  10 minutes of prep, set it, forget it.   8 hours later you have a meal.

My wife and I try to divide everything fairly evenly though she does the majority of the cooking (at least until grilling seaons kicks back in).  We both work full time, no reason one person should get saddled with all the work.

And a little known fact about me... I was "Homemaker of the Year" in seventh grade. Since I was neither in band nor choir I had to take home ec.  Highest GPA in the class won "Homemaker of the Year."  So I had to recieve this award on awards day in front of the entire middle school.  Now, it's hilarious.  Then, it seemed the end of the world.

I also love to cook, but I have to have the time. And I hate making a huge mess for myself, so I prefer to cook for at least one other person. The perfect husband for me will be one who is willing to clean up if I cook the meal--as well as take a couple of turns a week and cook for me when I don't feel well.

I feel bad for Tink. Try the Korean Ramen on your husband like Lost suggested. It's really good, and then at least you'll get *something* to eat when your languishing away.

Thanks for everyone's sympathy. I guess it's just one of those things. I think there are things that all of us don't like doing. For some it's dishes, others it's laundry, and others cooking. I like cooking okay, but it's deciding what to cook and having all the ingredients that bugs (plus the cleanup).

Lately, I've actually gone to having protein shakes for dinner. I will still sometimes make food for my husband because he needs more calories than me, but one cup of milk plus protein mix and I'm full for the rest of the night. Plus since it's only like 220 calories, I can have a treat too, if I so choose (although I have to say, the protein really curbs your appetite, so you don't really even desire treats). It's been really great cause they're fast, easy and I don't have to think of what to make. And since my husband actually likes things like Ramen, canned foods (soups, vegetables, and such), mac & cheese, etc., I just cook him something easy like that along with a protein shake for him and I'm done. We just started this a week and a half ago and it's going great.

I've also discovered in recent years that rice is the key to happiness.  It takes 10 minutes to make 2 servings and you can combine it with *anything* and it becomes a meal.

Chicken? Check.

Smoked Sausage and Salsa? Check.

Its cheap, and tastes great. I deal with the poor nutritional value in a few ways. I get a lot of brown rice, as well as high grade rice from Asian stores and Wild Rice. I cook it in a rice cooker to save me a lot of fuss and I serve it with a lot of veggies and greenstuff. The trick to not overeating rice is scale. A cup makes way too much for both my wife and I. Leftover rice can be frozen to use in fried rice recipes (and its yummier that way too)

Everyone in Utah, go to Pampas Argentine Steakhouse as soon as possible. We went there last night for Dawn's birthday, and the food was incredible.

Sorry. It's on University, about 350 N. About a block north of the new Dragon's Keep, actually. Dinners range from 9 to 14 dollars, though we got a special 2-person meal deal for $20 that included dessert. The primary focus, of course, is grilled steak, though they have quite a bit of fish and pasta on the menu as well.

Since my husband is out of town for about a week, we're playing "Let's dinners that J.T. doesn't like."

So tonight I tried the recipe for beans and rice that was posted on the Exponent blog this week.  It was quite tasty; my mother-in-law said it tasted like Chipotle.  Oh, and cornbread.  Tasty tasty cornbread.

Black Beans and Rice
Serves 4

1/2 c chopped onion
4 cloves garlic, minced
2 T olive oil
1 15 oz can black beans, rinsed and drained
1 14 1/2; oz can Mexican-style stewed tomatoes
1/8 to 1/4 t ground red pepper
1 t cumin
1 t oregano
Cooked rice
(Note: everything here is an approximation, feel free to add more or less of any ingredient)

In a medium saucepan, cook the ½ c onion and garlic in hot oil until tender. Stir in beans, undrained tomatoes and spices. Bring to boiling; reduce heat. Simmer, uncovered for 15 minutes.

Serve beans over rice with sour cream, cheese, cilantro, green onions;whatever you like. Salt and pepper to taste.

Some toppings that are surprisingly good with black beans and rice: mandarin oranges (from a can) and hard-boiled eggs (chopped or crumbled).

I made chocolate-dipped strawberries for a party last night, and they were wonderful. I didn't think they were quite that easy and cheap to make, especially since they're a dollar apiece at Harmon's right now.

Cheese is good. In fact, one of the best things I experienced while living in Wisconsin was really good cheese. For some reason, all cheese is better in Wisconsin. It's not the same outside of Wisconsin (even if the cheese is Wisconsin cheese).

Mmmm, cheese. We are never without cheese in my house. Probably stems from my having grown up on a dairy farm.

I have had better food lately than anyone of you because I have been in Bavaria. We did not plan to enjoy german food, but found a dish called "Wiener Art" that is marvelous. And the spatzel. Wonderful. And the food in Prague was fantastic. I could go on and on. There is one dish I don't know whether to put here or on the worst food lately. We were in Bruges, Belgium and it was at the seediest sidewalk cafe I have ever been to - in the States, you wouldn't even consider eating there. The only thing they still had left to eat was lasagna. Picture any ingredient you have ever eaten in lasagna - it wasn't in this. We finally decided to stop trying to identify the various layers (especially the green one). But it was very good.

I have learned to make my "eggs over medium" without breaking the yolks.  Go me!
Title: Re: Best food lately
Post by: Mad Dr Jeffe on June 22, 2006, 10:33:12 AM
word ... over medium is the best, Yolks done enough to be safe but still runny enough to soak up with toast or mix with ham. Yum.

As a southerner and the son of a farmer and soldier (my dad picked tobacco as a boy) breakfast is an important meal for me. Growing up, my dad always got up early to cook us fried egg sandwiches with bacon and a dash of pepper with coffee and usually grits or oatmeal. He and I would sit and read the paper and eat. If I have to skip a meal, due to empty pockets or necessity then Im more likely to drop lunch or dinner. So...

I got out two ramekins yesterday for breakfast,... set the oven at 425 put a slice of thin ham in the bottom of each ramekin and cracked an extra large brown egg in each one. Topped with some grated cheese and some butter and baked for 12 minutes and you have a real treat. And its compact too. Spray the ramekins with cooking spray (butter flavored first to prevent any sticking. They just slide out.
Oh and serve with fresh hot whole grits (or quick grits, just don't use the microwaveable kind).

One of the part-time nurses at work has a garden that is apparently quite fertile this year.  She has been bringing us fresh lettuce for a month or so, and today presented about four of us with HUGE bags full of produce. Radishes, zucchini, cucumbers, lettuce, sweet onions, green beans and peas.

I had an impromptu stirfry for dinner tonight with zucchini, onion, tomato and peas cooked in a little teriyaki sauce. It was fabulous. If only I'd had a red bell pepper it would have been perfect.

And I make chocolate chip scones for dessert.  My tummy is so happy.

(ETA: Ah, apparently zucchini has two c's and one n.)
