I wouldn't consider any of the humans in Spirited Away to look very Japanese.

Doesn't look Japanese at all to me...the clothes are pretty traditional, but face and hair? That hairstyle is fairly common in anime, but I never saw a single Japanese person with it...

To me, Miyazaki's character designs are all recognizably Miyazakiesque rather than Japanese or American.

They don't really look American to me.

I tend to think they look Japanese, largely because animators tend to (read nearly always) exagerate facial characteristics. This makes certain motions easier to animate. I tend to also think of this as how the animators percieve themselves and the people around them. So if the animators are Japanese, then their creations are too.

The translator of the earthseas books to Japanese talks about working with Ghibli.  Didn't read all of it, it's quite long, but I did scan it a bit.
