You know I know a few chef's who dont even bother making crusts with all the pre-made crusts availible today. Stacers right, buy yourself a Pilsbury one and you should be fine....

Only make sure it's the Pillsbury kind that looks rolled out, not the frozen kind. I'm not very impressed by the frozen kind. The Pillsbury kind is yum-my.

Well I converted our pie crust recipe
The ingredients are prone to change a little depending on the flour you get.
Get about 1 1/2 cups of flour 1/2 teaspoon salt, 2 teaspoons of baking powder
Get five tablespoons of lard or shortning
put aside 4 or 5 tablespoons of ice cold water. Sift and measure the flour

Sift flour, salt and baking powder, cut in lard, or work in with your fingers.

Stir in ice water


Roll out on a floured surface.
Just before you put the pie in the oven spread a little melted butter on the outside (it gives it a crisper crust)

you can bake the pie in a paper bag for a crispier crust too if you dont want the butter.

for a prebaked pie shell bake the crust in the oven 5-7 minutes.

Fillings

Butterscotch pie
1 cup brown sugar
pinch of salt
6 tbs flour
3 eggs seperated
1 tsp vanilla
1/4 cup butter
1 baked pie shell

Its a custard so its gonna be a little messy.
In a saucepan mix the sugar salt and flour together, slowly add the milk and stir constantly untill thick.
Beat egg yolks and mix in a small amount of cooked mixture, then stir the whole shebang together
cook untill very thick
take off heat add vanilla and butter . mix well and pour into pie shell.
make egg white meringue and pour over the top.
Bake at 400 degrees for 10 minutes or so.

Well, I tried the apple pie today. The crust was decidedly blah. Reading over Jeff's receipe makes my mouth water. But are you sure that you only use a 1/4 c and 1 tbsp of shortening? That doesn't sound like very much.

I'm worrried about the pumkin pie. The filling may not have been cooked all the way. I guess I will have to see. . . .

Its more like 4 or 5 tbs shortening and 1 1/2 cup flour

Jeffe, 4 tbsp = 1/4 c

It just seems like a small amount of shortening, but then again, I haven't tried the receipe yet.

Ok, I've been working on my Ninja Burgers and I must say coming up with a special sauce is fun.

My special sauce will have Wasabi, Soy Sauce, Pinapple Juice and a hint of low fat yogurt for creaminess, obviously I still have to work on it just a little.

The Fries of our ancestors are going to be a lovely fall Yam parboiled for 10 minutes allowed to cool then cut 1/2 inch thick battered with Tempura batter and fried till golden brown.

Oh and I intend to show people how to make Cucumber Shiozuke a kind of Tsukemone (Pickle)

Say, is anyone else against Nutmeg in Apple Pie? My dad sure seems to be. But I haven't tried the pie I just made, so I'm not sure what the big deal is.

I don't know Gemm, I've never tried Nutmeg in apple pie before. Traditionally, Nutmeg is used in pumkin pie.

Pumkin pie was a success! Except for the crust, which was made from the same receipe as the apple pie, and therefore suffers from the same blahness. My brother-in-law suggested substituting 1 to 2 tbsp of vinegar for some of the water.

Among other receipes that succeeded, the Green Jello Salad (ingredients: jello, cool whip, oreos) turned out wonderfully, and I have leftovers. :)
