I actually have baked cakes in the shape of Kansas on past January 29ths.  Reaves is right, it's easy, you just make a rectangle and take a bite out of the corner.  Some of those cakes had major cities (don't laugh), highways, and rivers marked, some were decorated with sunflowers, some were made to look like the state flag.

This year I didn't do a cake, but I made sunflower seed crackers.  I love Kansas Day.
